Bay Leaf: The Poet’s Laurel

History: The Bay Laurel is native to the eastern Mediterranean. Archaeological evidence suggests its use since the Bronze Age in both food and ritual. Laurel leaves and wreaths appear in Minoan and Mycenaean art, suggesting their use long before the classical Greeks.

Both Greeks and Romans used bay leaf medicinally for coughs and respiratory relief.

With European colonization and trade, the bay leaf spread beyond the Mediterranean. They now season stocks, braises, pickles, and sauces in many cultures around the world.

Interesting Facts: In Classical Greece, laurels were associated with Apollo, the god of the sun, prophecy, and poetry. According to myth, when the nymph Daphne fled Apollo’s pursuit, the gods transformed her into a laurel tree. Grief-stricken, Apollo declared the laurel his sacred plant. From then on, victors and poets were crowned with laurel wreaths in his honor.

Uses: Bay leaf adds subtle depth to broths, stocks, and slow-cooked dishes. However, dried bay leaves are tough and should be removed before serving.

Selection & Storage: Choose leaves that are vibrant green (if fresh) or olive green (if dried). Avoid yellowed, brown, or brittle leaves, which could indicate poor storage.

Beware of substitutes like Umbellularia californica (California bay) and Cinnamomum tamala (Indian bay), which have a different flavor.

Store dried leaves in an airtight container, away from excess heat, light, and humidity. The flavor diminishes after 6-12 months, so they should be replaced yearly.
