Melegueta Pepper: Grains of Paradise

It is alternatively called Alligator Pepper, African Pepper, or Guinea Pepper.

Scientific Name: Aframomum melegueta

History: Melegueta pepper is native to West Africa, particularly the wet lowlands of modern-day Ghana, Liberia, and the Ivory Coast. Their rise to fame began in the 13th and 14th centuries, when caravans carried them across the Sahara and introduced them to Arab merchants, who then introduced them to Mediterranean buyers.

During the late Middle Ages, the spice was highly valued throughout Europe, where it was affectionately known as “Grains of Paradise”, which most likely originated as a marketing ploy by clever merchants. They were a prized ingredient in spiced wines and meat pies. Their popularity increased further during the Age of Exploration, as Portuguese traders dominated the West African coast.

By the 18th century, melegueta pepper had fallen out of favor, and black pepper had become the preferred spice. However, grains of paradise are still well-loved in their homeland, where they are incorporated into soups, rice dishes, and palm wines.

Interesting Facts: Despite being called a “pepper“, melegueta is more closely related to cardamom.

Uses: Melegueta pepper is mainly used in West African dishes and spice blends. However, because the flavor is so similar, it can be used as a substitute for black pepper in various recipes.

Selection & Storage: Look for pepper that is hard, “pyramidal” in shape, and reddish-brown in color. Avoid pepper that seems dull or musty. Whole spices are always preferred to ground as they retain their flavor for longer.

Store in an airtight container away from excess heat, light, and humidity.
