History: The lesser-known cousin of the Sichuan pepper (Zanthoxylum bungeanum), Andaliman pepper is native to North Sumatra, Indonesia. It grows naturally in the cool, highland areas around Lake Toba, the largest volcanic lake in the world.

Unlike black pepper and Sichuan pepper, Andaliman pepper was never integrated into the spice trade due to its highly specific growing location and short shelf life. However, it has been gathered and used for centuries in traditional and ceremonial Batak cuisine.

Interesting Facts:

Uses: It can be used similarly to Sichuan pepper to provide a citrusy tingling sensation. It pairs exceptionally well with fatty meat, fish, and sauces.

Selection & Storage: Andaliman is primarily a foraged spice that is not widely cultivated. However, if given the chance, choose berries with a strong lemon scent; if it is faint, they are likely old. When possible, purchase from trusted Batak markets or specialty spice suppliers, as processing and freshness dramatically affect potency.

Store away for excess heat, light, and humidity in an airtight container.
